Recipe: Susie’s Chinese Salad
When you think back on childhood, there are always certain memories that stick out more than others. Some memories are things that we continue to do as adults and some memories we just look back on with fondness. One of these memories for me, is my mom’s Chinese salad recipe. For as long as I can remember it was always her go-to recipe to take to potlucks or family gatherings. It is one of those recipes that you quadruple and hope that there is some leftover to bring home. And, it never fails, a few people ask for the recipe every.single.time she made it!
Now, as an adult, this is also my go to recipe to bring to potlucks. I have gathered a few recipes I like to take, but this is the one I fall back on. And, same story as my mom, I always get asked for the recipe! This recipe is also very flexible! It can be adjusted to be low carb/keto if necessary.

Susie’s Chinese Salad
Ingredients
- 1 8-ounce package cole slaw mix
- 8 TBSP slivered almonds
- 2 tsp sesame seeds
- 8 green onions chopped
- 1 package Ramen noodles* dry
Dressing-
- 4 TBSP sugar*
- 6 TBSP rice vinegar
- 3/4 cup salad oil
- 2 tsp salt
- 1 tsp pepper
Instructions
- In large bowl, mix cole slaw mix, onions, almonds, and sesame seeds.
- Mix all dressing ingredients in a bottle. Refrigerate until ready to serve. (It helps the ingredients blend together better)
- To serve – break Ramen into small pieces and sprinkle over salad.
- Pour dressing over salad.
- Toss together and serve!
